I love this quick and easy chicken pasta salad recipe! It only takes a few minutes to throw together, it can be made ahead of time, and it’s both tasty and filling. Plus, you likely already have the ingredients in your pantry.

I can remember plenty of times where I’ve been thinking and searching for a recipe for a potluck that’s simple to make and quick to throw together because I’ve left it to the last minute. This quick and easy chicken pasta salad recipe is perfect for a situation like that!
As we’re approaching summer here in New Zealand, the weather is getting warmer. This dish is great for those days when you really don’t want to turn the oven on to cook a hot dinner, or even consume a hot dinner. You can even make the pasta salad ahead of time and put it in the fridge until you’re ready to eat it, so you can get the cooking done before the weather gets too warm.

- 4 cups pasta (cooked)
- 1 can chicken in mayo (185 grams)
- 1/3 cup mayonnaise
- 1/4 cup pickles (diced)
- 2 tablespoons red onion (diced)
- salt and pepper to taste
Ingredients

- Combine all ingredients in a large mixing bowl. Season with salt and pepper to taste.
- Serve chilled.
- Keep in the refrigerator in an airtight container 2-3 days.
If you can't find canned chicken with mayo, you can use regular canned chicken but may need to add a little extra mayonnaise.
